Fluffy Vegan Banana Pancakes

How to make

Peel & mash 2 overripe bananas. Add to a measuring jug.

Top up with non-dairy milk to reach 300ml total volume.

Mix in 1 tsp vanilla extract & 2 tbsp vegetable oil.

Combine 150g self raising flour,  1 tsp baking powder & 1/4 tsp salt.

Fold the wet mix into the dry.

Fry in an oiled frying pan over a medium-low heat until golden on both sides.

Enjoy the pancakes warm with vegan butter & maple syrup
